Serves 6 | Prep Time 10 minutes | Cook Time 30 minutes
• 14 ounces Eden Crushed Tomatoes
• 1 1/2 cups organic tomatoes, diced
• 1 cup Eden Navy Beans, do not drain
• 2 cups Unsweetened Edensoy, or Original
• 1 medium onion, diced
• 2 cloves garlic, minced
• 1/4 cup celery, diced
• 1 tsp dried thyme
• 2 tsp organic maple syrup
• 1/8 tsp Eden Black Pepper, or to taste
• 1/2 tsp Eden Sea Salt, or to taste
• 1 Tbsp fresh dill, finely chopped
or 1 tsp. dried dill
Place all ingredients except for the Edensoy and dill in a medium soup pot, cover and bring to a boil. Reduce the flame to medium-low and simmer, stirring occasionally, for 25 to 30 minutes. Remove from the flame. Blend in a blender. Place back in the soup pot, add the Edensoy and reheat, but do not boil. Place in serving bowls and garnish with dill.
