Buckwheat Pasta with Tahini Onion Sauce

Serves 5 | Prep Time 10 minutes | Cook Time 20 minutes

Ingredients

8 ounces Eden 100% Soba Buckwheat Pasta, 1 package
or any Eden Soba

1 medium onion, diced

2 cloves garlic, minced

2 tsp Eden Extra Virgin Olive Oil

1/4 cup EDEN Tahini (sesame butter)

2 cups water

1 cup Unsweetened Edensoy

1 Tbsp Eden Kuzu Root Starch, dissolved in 2 T. cold water

2 tsp Eden Shoyu Soy Sauce

1 tsp ground thyme

1/2 tsp ground sage

1 dash black pepper

2 cups collard greens, sliced thin and blanched 2 minutes
or kale, or spinach

Directions

Add pasta to boiling water and cook 10 minutes or until tender. Do not overcook. While cooking prepare the sauce. When done rinse and drain.

To prepare the sauce, sauté onions and garlic in oil until translucent, about 5 minutes. Dissolve the tahini in 2 cups of water and slowly add to the onions and garlic. Reduce the heat to low, stirring constantly until sauce is smooth. Add the soymilk and dissolved kuzu, stirring constantly to prevent lumping. When thickened, add the shoyu, ground thyme, sage and black pepper. Serve over freshly cooked soba and garnish with the blanched kale or collard greens.
