• 1 lb organic extra firm tofu, rinsed
• 2 Tbsp freshly squeezed lemon juice
• 1 Tbsp Eden Brown Rice Vinegar
• 2 tsp Eden Ume Plum Vinegar
• 1/3 cup fresh chives, finely chopped
• 1/3 cup fresh dill, finely chopped
• 1/4 cup water
• 2 cloves garlic, minced
• 1 Tbsp fresh parsley, minced
• 1 tsp organic maple syrup
Place all ingredients in a blender or food processor. Purée until smooth and creamy. Place in a serving bowl. Use for dipping vegetable crudités.
