• 2 cups finely chopped broccoli florets
• 1/2 cup finely chopped carrots
• 1/3 cup finely chopped red bell pepper
• 15 ounces Eden Black Eyed Peas, rinsed and drained
• 3 cloves garlic, minced
• 2 Tbsp Eden Extra Virgin Olive Oil
• 1 tsp Eden Dried Oregano
• 1/2 tsp Eden Sea Salt
• 1/8 tsp Eden Black Pepper
Preheat the oven to 400° F. Mix all ingredients together and place in a medium casserole dish. Bake uncovered for about 20 to 25 minutes. Remove and serve.
