• 15 ounces Eden Garbanzo Beans, drained
• 1/3 cup Vegan Mayonnaise, (see Eden's recipe or store bought)
• 1/4 cup small diced celery
• 1/4 cup small diced red onion
• 2 Tbsp chopped pitted Kalamata olives, or any black olives
• 2 Tbsp Eden Pumpkin Seeds, or Spicy Pumpkin Seeds
• 2 Tbsp Eden Dried Cranberries
• 1 tsp Eden Ground Turmeric
• 1 tsp minced parsley
• 1 pinch Eden Black Pepper, or to taste
• 8 slices whole grain bread
• 8 lettuce leaves
Place beans in a blender or food processor and pulse until mashed or mash with a potato masher. Remove and place in a mixing bowl. Add all remaining ingredients except the bread and lettuce. Mix thoroughly. Spread an equal amount of chickpea salad spread on 4 slices of the bread. Top each with a lettuce leaf and remaining bread slices.
