Chickpea Salad Sandwich with Pepitas & Cranberries

Ingredients

15 ounces Eden Garbanzo Beans, drained

1/3 cup Vegan Mayonnaise, see Eden recipe
or store bought

1/4 cup small diced celery

1/4 cup small diced red onion

2 Tbsp chopped pitted Kalamata olives, or any black olives

2 Tbsp Eden Pumpkin Seeds
or Eden Spicy Pumpkin Seeds

2 Tbsp Eden Dried Cranberries

1 tsp ground turmeric

1 tsp minced parsley

1 pinch black pepper, or to taste

8 slices whole grain bread

8 lettuce leaves

Directions

Place beans in a blender or food processor and pulse until mashed or mash with a potato masher. Remove and place in a mixing bowl. Add all remaining ingredients except the bread and lettuce. Mix thoroughly. Spread an equal amount of chickpea salad spread on 4 slices of the bread. Top each with a lettuce leaf and remaining bread slices.
