• 1 lb organic firm or extra firm tofu
• 2 Tbsp fresh lemon juice
• 1 1/2 Tbsp Eden Brown Rice Vinegar
• 2 tsp Eden Ume Plum Vinegar
• 1 tsp organic maple syrup
• 1/3 cup finely chopped fresh chives
• 1/4 cup cold water
Place all ingredients into a blender and pulse until smooth and creamy. Place in a serving bowl. Use for dipping raw or blanched vegetables, or as a topping for tacos, chili, baked potatoes, and more.
