Serves 8 | Prep Time 10 minutes | Cook Time 25 minutes
• 29 ounces Eden Pinto Beans, do not drain
• 15 ounces Eden Spicy Pinto Beans, do not drain
• 1 Tbsp Eden Extra Virgin Olive Oil
• 1 1/2 cups onions, chopped
• 2 cloves garlic, minced
• 1/4 cup Eden Bonito Flakes, optional
• 1/2 cup water
• 1/2 tsp Eden Sea Salt, or to taste
• 1 tsp Eden Cumin
Heat oil in a medium saucepan. Saute the onions for 3 to 5 minutes. Add the garlic and saute 1 minute. Add all remaining ingredients, bring to a boil, reduce heat to medium-low and simmer for 20 to 25 minutes until creamy. Great with fresh cornbread!
Variations: fresh sweet corn and bell peppers can be added if desired.
Note: bonito flakes give the beans a smoky flavor similar to bacon, which is typically used as an ingredient in Mexican Pinto Beans. However, it may be omitted for a vegan dish.
