Refried Pinto Beans

Serves 4 | Prep Time 2 hours | Cook Time 20 minutes


1 1/2 cups cooked Eden Dry Pinto Beans, follow box directions

2 tsp Eden Extra Virgin Olive Oil

1/2 tsp Eden Hot Pepper Sesame OIl

1 clove garlic, minced

1/4 cup small diced onion

1/2 cup small diced red bell pepper

1/4 tsp Eden Cumin Powder

1/2 tsp Eden Sea Salt

1/4 cup minced parsley or cilantro


Cook beans per directions. Heat oils in a heavy skillet, saute garlic, onion, and peppers 2 minutes. Add half the beans and all remaining ingredients. Saute 5 minutes. Mash the beans with a fork or potato masher to form a thick puree. Add remaining beans and slowly add enough bean cooking water to desired consistency - not to thick or thin. Cook 7 to 10 minutes until hot, stirring frequently.
