• 1 1/2 cups cooked Eden Dry Pinto Beans, follow box directions
• 2 tsp Eden Extra Virgin Olive Oil
• 1/2 tsp Eden Hot Pepper Sesame OIl
• 1 clove garlic, minced
• 1/4 cup small diced onion
• 1/2 cup small diced red bell pepper
• 1/4 tsp Eden Cumin Powder
• 1/2 tsp Eden Sea Salt
• 1/4 cup minced parsley or cilantro
Cook beans per directions. Heat oils in a heavy skillet, saute garlic, onion, and peppers 2 minutes. Add half the beans and all remaining ingredients. Saute 5 minutes. Mash the beans with a fork or potato masher to form a thick puree. Add remaining beans and slowly add enough bean cooking water to desired consistency - not to thick or thin. Cook 7 to 10 minutes until hot, stirring frequently.
