Whole Grain Udon with Pickled Ginger

Serves 4 | Prep Time 10 minutes | Cook Time 10 minutes

Ingredients

• 8 ounces Eden 100% Whole Grain Udon

• 1 Tbsp Eden Toasted Sesame Oil
or Eden Extra Virgin Olive Oil

• 1 clove garlic, minced

• 1/2 cup green onions

• 1 cup button mushrooms, thinly sliced

• 1/2 cup carrots, juilienned

• 1/2 cup green cabbage, shredded

• 3 Tbsp Eden Pickled Ginger Slices, diced, reserve pickling liquid

• 1 sheet Eden Sushi Nori, crumbled

Directions

Cook udon according to package directions, rinse, drain and set aside. Heat sesame oil in a skillet. Sauté garlic, mushrooms, carrots, cabbage and half the green onions about 5 minutes. Reserve half the green onions for garnish. Add pickled ginger, all of the ginger juice and cooked udon. Heat thoroughly. Serve and garnish with crumbled nori and remaining green onions.
