Udon with Olives and Fresh Herbs

Serves 7 | Prep Time 15 minutes | Cook Time 10 minutes


• 8 ounces any Eden Udon

• 1 cup pitted Kalamata black olives, coarsely chopped

• 1/4 cup Eden Extra Virgin Olive Oil

• 1/2 tsp Eden Hot Pepper Sesame Oil

• 2 Tbsp finely chopped red bell pepper

• 1/2 cup finely chopped fresh parsley

• 1/2 cup finely chopped fresh mint

• 1 Tbsp finely chopped fresh thyme

• 1 clove garlic, minced

• 2 Tbsp small capers, drained


Cook pasta as package directs. While the pasta is cooking, combine all remaining ingredients in a medium-size mixing bowl. Drain and rinse the pasta when al dente. Place the pasta in the mixing bowl and toss with olive and herb mixture. Serve.
