• 1/2 pound organic extra firm tofu, rinsed and drained
• 2 Eden Umeboshi Plums, remove pits
• 1 Tbsp onion, chopped
• 1/4 cup water
• 1 Tbsp fresh parsley, chopped fine
• 1 Tbsp fresh chives, chopped fine
• 1/2 tsp Eden Shoyu Soy Sauce
Place all ingredients into a food processor or blender and puree until smooth and creamy. Serve over all types of salads.
