Clinton, Michigan - Eden Organic Soba and Udon, all seven varieties, now have upgraded packaging. The former bags are now New reclosable boxes.
The new boxes are made of 100% recycled paperboard and are recyclable. They are designed to be displayed either horizontally or vertically. A window on the front of each box shows the pasta within. There is no change in price, UPC code, or nutritional information, only the packaging has been improved and updated.
Eden Organic Soba and Udon are made of the finest North American family farm organically grown grain • Buckwheat • Hard Red Spring Wheat • Whole Grain Durum Wheat • California Short Grain Rice • Kamut® • and Spelt. They are small batch crafted at the Sobaya Company of Montréal, Québec, an Eden company and North America's only certified organic, traditional Japanese pasta manufacturer.
All Eden Soba and Udon are made by the traditional Japanese method of 'roll and cut,' a technique that has been handed down through generations. The grain is freshly ground for each small batch run. The flour is slowly kneaded with pure water and a bit of Eden Sea Salt. The salt helps to bind the dough, enhances flavor, and naturally preserves the pasta. When ready the dough is rolled out and folded onto itself eight times, then cut to length. The long strands of noodles are lifted onto racks and moved into the drying room. They are allowed to dry slowly for up to two days depending upon thickness, temperature, and humidity. Constantly monitored until ready, they are hand cut and boxed. Each step helps create their perfect texture and flavor.
Eden makes seven varieties of Organic Soba and Udon. Each is low sodium and a good to excellent source of protein, thiamin (vitamin B1), niacin (vitamin B3), iron, and magnesium.

Eden Organic Kamut Soba - 80% Organic Kamut Wheat, 20% Organic Whole Buckwheat, Eden Sea Salt. Kamut is a non-hybridized ancient wheat. Buckwheat is a traditional health food that warms and energizes.
Eden Organic Soba - 70% Organic Spring Wheat, 30% Organic Whole Buckwheat, Eden Sea Salt. 'Soba' is Japanese for buckwheat, and for the traditional square cut noodle that is always made with buckwheat.
Eden Organic Spelt Soba - 80% Organic Spelt, 20% Organic Whole Buckwheat, Eden Sea Salt. Spelt is commonly tolerated by those with sensitivities to modern wheat. Here it's blended with gluten free buckwheat.
Eden Organic Spelt Udon - Organic Spelt Wheat, Eden Sea Salt. An ancient cousin of modern wheat. St. Hildegarde wrote, "Spelt produces a strong body and healthy blood, and makes the spirit light and cheerful."
