EDEN Barley & Brown Rice Miso is traditionally made by an artisan family that has made miso since 1854 in Nagano, Japan. The new miso tub package has a one-way valve to allow fermentation gas to escape while preventing oxygen from entering. It avoids the need to heat the miso before packaging to reduce the biological activity of this living culture, unpasteurized miso.
