Although Nature provides abundant sweetness it has become difficult to come by. Chemical agriculture, by and large, destroys natural sweetness of crops, and processed, refined, crystallized sugar is a drug, not food. Prevalent sweeteners transformed from plants into refined sweeteners such as cane or beet sugar, brown sugar, evaporated cane juice, corn syrup, etc. are detrimental to wellbeing and happiness. They stress us, and in doing so demand even more. Two versatile more intelligent sweeteners regaining popularity today are EDEN Organic Barley Malt Syrup and EDEN Organic Sweet Sorghum.

‘Sugar Of The Plains’

EDEN Sweet Sorghum is organically grown and prepared by Midwestern Amish families. It is made from Sorghum bicolor (L.) Moench, a variety with tall cane and high juice content. Sorghum stalks are pressed for bright green juice that's slowly fire cooked in stainless steel into a sweet syrup. Eight gallons of cane juice cook down to a gallon of sweet sorghum. Sweet sorghum is sometimes called ‘molasses’ or ‘sorghum molasses,’ even though molasses is made from sugar cane or beets. EDEN Sweet Sorghum is not molasses. Once known as the ‘Sugar of the Plains,’ sweet sorghum used to be the most important sweetener in the U.S.A., before it was replaced by the politics of refined sugar. EDEN Sweet Sorghum is a wiser, more nutritious, gluten free, sweetener that is gaining popularity because it is so tasty, and so much better for health.

Traditional Malt

Ancient malting is a simple and amazing process that transforms grain into wholesome sweetness. EDEN Barley Malt Syrup is artisan crafted from two ingredients: U.S.A. family organic whole grain malting barley and pure water, absolutely nothing else is added. In a 30 to 45 day process the barley is sprouted converting carbohydrates to sugars, kiln roasted, cured, mashed, and cooked down into a thick syrup concentrate. Its malty fragrance and mild caramel undertones add appealing complexity to breads, baked goods, glazes, and cereals. EDEN Barley Malt does not stress us like refined sugars because its sweetness is more slowly metabolized together with its other nutrients. Its sugar profile is 76% maltose, 16% glucose, 6% sucrose, and 2% fructose. Use one-for-one to replace honey and molasses in recipes. To replace sugar, use 1/4 cup less liquid for each cup of barley malt used.

Spread, Drizzle, Cook, and Bake

EDEN Barley Malt Syrup and EDEN Sweet Sorghum are simple, traditionally made, versatile sweeteners that can be used much the same way as honey, maple syrup, and molasses in cooking and baking. They are ideal for rye, pumpernickel and wheat bread, gingerbread, baked goods, Boston baked beans, pecan pie, candied sweet potatoes, baked winter squash, sweet and sour sauces, barbeque sauce, caramel corn, and popcorn balls. They are also delicious drizzled on pancakes, waffles, cereal, muffins, biscuits, and other breakfast fare. They contain no additives of any kind and are kosher.
