Miso, fermented soybean paste, is rightfully earning appreciation outside of Japan as a delicious, exceptionally beneficial and protective probiotic superfood. Only a small percentage of miso in Japan today is made in the wisely patient, traditional way. Organic EDEN Misos are a significant portion of them. Commercial, designed to make money misos are cheaply and quickly made out of genetically engineered, hexane-defatted soy and pharmaceutical enzymes. These cheap pseudo-misos tend to contain many undeclared and inappropriate chemical processing aids and flavor enhancers like monosodium glutamate (MSG).

The variety of miso is surprisingly wide ranging. Its taste and other sensual characteristics result from variations in choosing beans, grains, and other ingredients; although soybeans with barley, rice, wheat, millet, and buckwheat are most common. EDEN misos are made in Japan from U.S.A. family farm Non-GMO, whole organic soybeans and grain, the finest sea salt, and koji Aspergillus oryzae, a vitamin B-12 synthesizing culture starter.
