Fats make food taste better, are a major source of energy, and are required to absorb many essential nutrients. They are necessary for cellular function, muscle movement, and digestion. Not all fats are good though. Taken in excess over time, some cause grave health issues. Taking good fat regularly is critical for good health.
It has been impossible to know the difference between ‘good’ and ‘bad’ fat if following government guidance and listening to the media. Complete reversals, intentionally confusing, over the past decades have been widely publicized as a result of $100s of millions of food industry lobbyist spending on ‘new science’ and pharmaceutical marketing.
The following is sound advice. Sound facts do not change.
Good fats are polyunsaturated and monounsaturated fats from whole grains, beans, legumes, vegetables, unrefined vegetable oils, nuts, seeds, and fish. Unsaturated fats encourage, maintain, and strengthen good health.
Bad fats are trans fats from animal food, and should be limited. Even worse is hydrogenated and partially hydrogenated trans fat. These processed fats are made to give fat a firmness for food preparation purposes. These have been banned in many countries, but not the U.S. There is no safe level of consumption for them.
Saturated fats fall in the middle and should also be limited. Saturated fat comes from red meat, dairy products including cheese and whole milk, eggs, and coconut oil. They are also common in commercial baked goods. Overconsumption of saturated fat elevates cholesterol. Eating food rich in trans and saturated fat increases harmful LDL cholesterol and reduces beneficial HDL cholesterol. Bad fat is a huge factor in the poor health of Americans. It is smart to replace saturated and trans fats with polyunsaturated and monounsaturated fats.

Tahini is staple food of Mediterranean and Middle East cultures going back thousands of years. It is a key ingredient of hummus and many traditional dishes of societies all over the world.

These are absolutely confusing times. Information is intentionally polarized into contradictory, mutually exclusive opposites to manipulate us. The utility, necessity, of a Unifying Principle like that taught in macrobiotics, is being accentuated. Opposites are not contradictory. They are harmonious, contrasting each other when seen in clear light.
Well founded, reliable principles have become overshadowed by dogmatic pseudo-science and disingenuous politics fashioned to disguise greed and self-serving agendas that are detrimental to all life on Earth; agendas that prevent peaceful co-existence amongst us.
The organic food movement has been co-opted by big government to serve big business to prevent its development into systems of production and distribution managed by free people for the benefit of all life on Earth. Fraud and dishonesty abound in almost the entire food system, as well as many other socially essential systems.
This urgent need to transcend moronic idiocy is a great opportunity for people to reevaluate and morph relationships with the spiritual, family, and professional realms. The paths we are being pushed into maintain the intended confusion and lead to further war, disease and suffering. To remain free of these influences a steadfast centering of the basis of our judgements must come from the perspective of sound spiritual principles.
Healthy soil creates healthy, abundant, peaceful life.
The U.S. government just declared that organic food requires no soil, contradicting the Organic Food Product Act of 1990.
Become the needed change. Stop supporting the cause of suffering. Ignore and avoid it. A joyous, spiritual revival is the way “… back to the garden.”
