Bean cultivation goes back at least 10,000 years in the Americas, and 20,000 years in eastern cultures. They are grown in 150 countries, today.
In the Americas, native people call the companion plants — beans, corn, and squash — The Three Sisters. A horrendous spread of untested GMOs (corn pollen can travel dozens of miles) has led corn to be removed from many wise folks' food options. The loss of corn to greed and ideological, illogical domineering has made beans even more important. As a regular part of one's diet, beans ensure total nutrition. Dr. Joan Sabaté, professor in the Department of Nutrition at Loma Linda University, recently reported at the International Congress of Vegetarian Nutrition (ICVN) that simply reducing the consumption of beef and substituting beans would significantly reduce consumers' environmental footprint worldwide by reducing greenhouse gas. Beans are also relatively easy to grow organically, and useful as transitional crops toward organic production. Unitarian Service Committee Canada maintains that switching from toxic chemical-based methods to sustainable farming can increase crop yields up to 79 percent, which is compelling by any measure.
