Fenugreek Trigonella foenum-graecum - is cultivated worldwide and can be used both as an herb and as a spice. It's most frequent use is in making hot, spicy curries and dhal (spicy lentil or bean dishes), and is also used in pickling. Its flavor is warm and penetrating, when ground it gives off a spicy, pungent aroma with a slight bitter aftertaste. It is a common ingredient in curry powder blends along with cinnamon, coriander, cloves, chilies, turmeric, pepper, cumin, and other spices.
