Oregano Origanum vulgare - aka wild marjoram, a member of the mint family and one of the staple herbs widely used in Italian, Greek, Portuguese, Spanish, and Middle Eastern cuisine. The leaves of the plant are dried and flaked. Dried oregano is often more flavorful than fresh oregano. It is used in making savory tomato sauces, stir-fried vegetables, grilled fish and seafood. It is most commonly used in combination with basil, contributing the distinctive Italian flavor to food. It is especially popular in southern Italian dishes and adds flavor to Greek salads, and marinades for Turkish kebabs. When combined with olive oil and lemon juice it is delicious as a marinade, in barbecue sauce and casseroles. It is commonly used on traditional Italian pizza and in pizza pasta sauces.
