Yellow Mustard Seed Brassica alba - small 2mm in round seed with mild pungent flavor. Brown mustard seed is hotter in flavor than yellow. It is an important spice in many ethnic cuisines. Mustard is also known as the "eye of newt." It is most frequently used to make yellow mustard when combined with vinegar, turmeric, and other spices.
