EDEN Organic Whole Wheat Pastry Flour is organically grown in vital soil and ground at our certified organic, AIB highest rated Michigan mill. Considerably lower in protein and gluten than hard wheats, pastry flour is ideal for lighter, flakier pastries, pie crust, cookies, muffins, cakes, gravies, sauces, and more (see our pie crust and pastry recipes).

Soft white wheat Triticum aestivum L. is planted in the fall for summer harvest. It is low fat, saturated fat and cholesterol free, sodium free and a good source of fiber. According to the FDA, "Diets rich in whole grain and other plant foods and low in total fat, saturated fat, and cholesterol may reduce the risk of heart disease and some cancers." Also, "Low fat diets rich in fiber-containing grain, fruits, and vegetables may reduce the risk of some types of cancer, a disease associated with many factors." 100% whole grain.
