Eden Organic Whole Tomatoes are the flavorful Roma variety grown on a 800+ acre family farm located on the southern edge of Ontario, Canada in the Thames River Delta. The tomatoes are grown in mineral rich organic soil, carefully tended, harvested and expertly cooked only in organic tomato juice. Roma tomatoes are prized for their deep color and appealing flavor.

From mid to late August through September Roma tomatoes are harvested at the peak of red ripeness, sorted, and inspected. Whole tomatoes are hot water bathed loosening their skin and lightly brushed causing the skin to separate. The peeled tomatoes are visually inspected and cooked with fresh organic tomato juice.

Eden Organic Whole Tomatoes are rich in antioxidants vitamin C and beta carotene (vitamin A) and offers 5.2 mg of, perhaps the most effective known antioxidant, lycopene per serving. According to recent research cooked tomatoes are the best source of lycopene. John Erdman, professor of food science and human nutrition and of internal medicine at the University of Illinois said, "It has been unclear whether lycopene itself is protective. We believe people should consume whole tomato products in pastas, salads, in tomato juice, and even on pizza."

Commercial tomatoes may be synthetically 'fed', force ripened, and travel hundreds of miles before processing. To loosen the skin for peeling they are bathed in lye or other caustic solutions, then loaded with refined salt, refined sugar, and preservatives. Even most organic brands add citric acid and calcium chloride as processing aids. Whole tomatoes are usually loaded with sodium to give them flavor.
