EDEN Organic Small Vegetable Shells are small batch hand crafted at our Eden Organic Pasta Company, a Detroit landmark using traditional pasta making techniques and vintage Italian equipment since 1923, and the first food production facility in North America to be third party certified organic. Whole grain durum flour is milled at our organic, AIB rated Superior, Clinton, Michigan mill. Golden amber durum semolina is prepared at a certified organic mill. The dough is prepared in four separate batches - plain durum wheat and semolina wheat; durum wheat and semolina wheat mixed with carrot and annatto powder; durum wheat and semolina wheat mixed with beet powder; and durum wheat and semolina wheat mixed with spinach powder. Slow, thorough kneading prepares the dough. Using a traditional screw press, each of the four separate batches of dough is extruded through an artisan brass sea shell die, cut into individual pieces and spread on drying racks. It goes through an initial hot air/steam dryer to reduce moisture slowly, and a final drying room where it spends about 16 hours. When ideal it's packed. Each step helps to create pasta of exceptional flavor, texture, and character. The pasta is packaged in a reclosable box, with a delicious recipe and photo from Eden's kitchen printed on the back.
