In January 1983 Eden discovered a soymilk made using a new technique pioneered at Cornell University and engineered in Japan. Amazake is a traditional Japanese beverage made from cooked brown rice that is fermented for several hours using koji Aspergillus oryzae. Koji produced enzymes break down the complex rice starch into easily digestible sugars, transforming the rice mixture into a pleasantly sweet porridge. This thick porridge is eaten as is, used in making desserts, breads and pickles, but most frequently it is blended with water to produce a delicious, nutritious beverage. Enzymes produced during the fermentation process are believed to contribute to healthy digestion. Since amazake is a healthy natural whole grain sweetener made entirely from rice, it is rich in complex carbohydrate and does not cause the extreme highs and lows (insulin response) associated with simple, refined sugars.

As soy became popular for health benefits in the late 80s and 90s many commercial food processors rushed through a series of short cuts to exploit it. Soybeans have been important human food for over 5,000 years. Western science is confirming whole soy as one of the healthiest foods. In 1999 the FDA recognized the role of soy in reducing cholesterol saying, "25 grams of soy protein a day, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease."
