Arare (pronounced ah-rah'-ray) are one of the most popular snack foods in Japan. Eden Five Flavored Arare Rice Puffs are made from sweet brown rice Oryza glutinosa, a stickier and more glutinous variety than regular brown rice. The sweet brown rice is washed, soaked and steamed with sea salt. The steamed rice is then placed in a special machine that pounds it into a glutinous, sticky dough called mochi. While the sweet rice is being pounded, black sesame seeds are rinsed and lightly roasted to release their characteristic rich nutty flavor. When the pounding of the rice is finished, the sesame seeds (Sesamum indicum), green nori flakes (Enteromorpha sp. or Monostroma nitidum), and koji (Aspergillus oryzae) are added, producing mochi with different colors and flavors. The mochi is rolled into sheets, cut into small pieces and placed in a room for two to three days to cool and harden. The hardened mochi is then baked. As the mochi bakes it puffs up and hardens. When done the puffs are lightly sprayed with a solution of premium wheat free tamari soy sauce, barley malt syrup, kombu broth made by simmering kombu seaweed and water, and shiitake broth made by simmering shiitake mushrooms in water, giving the baked puffs a shiny brown, multi-flavored glaze. After glazing the puffs are baked a final time to dry and harden the glaze before packaging.
