Eden Organic Whole Tomatoes with Basil are the finest Roma tomatoes grown on a 800+ acre family farm located on the southern edge of Ontario, Canada in the Thames River Delta. The tomatoes are grown in mineral rich organic soil, carefully tended, harvested and expertly cooked only in organic tomato juice with a generous amount of organic dried sweet basil. Roma tomatoes are prized for their deep color and appealing flavor.

From mid to late August through September Roma tomatoes are harvested at the peak of red ripeness, sorted, and inspected. Whole tomatoes are hot water bathed loosening their skin and lightly brushed causing the skin to separate. The peeled tomatoes are visually inspected and cooked in fresh organic tomato juice with organic dried sweet basil.

Eden Organic Whole Tomatoes with Basil are rich in antioxidants vitamin C and beta carotene (vitamin A) and offers 5.2 mg of, perhaps the most effective known antioxidant, lycopene per serving. According to recent research cooked tomatoes are the best source of lycopene. Low in calories, with no fat, and contains potassium, dietary fiber, protein, iron, vitamins B1, B2 and B3, and magnesium.

According to the FDA, "Low fat diets rich in fruits and vegetables (foods that are low in fat and may contain dietary fiber, Vitamin A, or Vitamin C) may reduce the risk of some types of cancer, a disease associated with may factors." Also, "Diets low in sodium may reduce the risk of high blood pressure, a disease associated with many factors." Eden Organic Whole Tomatoes with Basil are fat free, very low in sodium with no salt added, and an excellent source of the antioxidant nutrients vitamins A and C.

Over 600 known carotenoids (plant pigments) are recognized as antioxidants. Researchers say lycopene out paces all other known carotenoids in antioxidant ability. When compared to raw tomatoes, they found cooked deep red Roma and cherry tomatoes to be the highest in lycopene, and organic were even higher. Cooking, they say, concentrates the lycopene, and cooking with a bit of oil (like Eden Extra Virgin Olive) increases absorption. Although lycopene may be beneficial to health, researchers say its not just lycopene that make tomatoes a healthy food. In whole cooked tomatoes, lycopene works together with secondary phytonutrients and vitamins making it much more effective than lycopene supplements that do not contain these other nutrients. John Erdman, professor of food science and human nutrition and of internal medicine at the University of Illinois said, "It has been unclear whether lycopene itself is protective. We believe people should consume whole tomato products in pastas, salads, in tomato juice, and even on pizza."

Tomatoes cooked together with basil is a winning combination. Recent research has found basil to contain flavonoid and antioxidant rich essential oils. Basil is an ancient herb native to India and eventually spread throughout the world. The name basil is derived from the Greek word 'basilikohn' meaning royal. Basil was consider to be a sacred and very noble healing herb.

Other tomatoes may be synthetically 'fed', force ripened and travel hundreds of miles before processing. To loosen the skin for peeling they are bathed in lye or other caustic solutions, then loaded with refined salt, refined sugar, and preservatives. Most organic brands add citric acid and calcium chloride as processing aids. Most whole tomatoes are loaded with sodium to give them flavor. Eden Organic Whole Tomatoes with Basil have no added sodium and great flavor, no caustic lye solutions, citric acid or derived calcium chloride. Eden is the wise and healthy choice, taste and see the difference.

Eden Organic Whole Tomatoes with Basil are ideal for making chunky homemade spaghetti sauce, soups, stews and casseroles, or simply heat and serve as a vegetable side dish.
