Eden Organic Vegetable Ribbons are small batch hand crafted at the Eden Organic Pasta Company, a Detroit landmark employing traditional pasta making techniques and vintage Italian equipment since 1923, and the first food production facility in North America to be third party certified organic.
Golden Amber Durum Triticum aestivum is the most sought after pasta making grain in the World favored for its excellent nutrition and its ability to create smooth firm texture. This grain is USA high plains grown on family farms committed to building vital soil, cleansing the environment, and producing the safest most nutritious food.
Golden Amber Durum wheat is freshly ground into semolina at a certified organic mill. The flour is slowly, thoroughly kneaded with pure water and (in alternating batches) organic beet or organic spinach. To form ribbons the dough goes through a series of rollers that repeatedly fold the dough over itself, a process called laminating. After the sheet of dough has been laminated eight times (creating light and even texture) it is fed between stainless steel cutters to form the desired width and cut to length. The pasta goes through an initial hot air steam dryer to reduce moisture slowly, then to the drying room for about 16 hours. When finished perfectly, each of the three colors is mixed together and packaged. A celebration of grain and vegetables. The pasta is packaged in a reclosable box, with a delicious recipe and photo from Eden's kitchen printed on the back.
All Eden Organic Pasta is packaged in boxes made from recycled and recyclable paperboard, one of the most environmentally friendly packages available. According to the 100 percent Recycled Paperboard Alliance (RPA100.com), "Fourteen trees are saved for each ton of paperboard converted to 100 percent recycled paperboard. Trees are critical to the sequestration of CO2 (a greenhouse gas) in North America. For each ton of paperboard converted to 100 percent recycled paperboard, an equal amount of recovered fiber has been diverted from municipal landfills. Production of 100 percent recycled paperboard uses 50 percent less energy compared to virgin grades of paperboard, thus significantly reducing the greenhouse gases released into the environment."
According to the FDA, "Low fat diets rich in fiber-containing grain products, fruits, and vegetables may reduce the risk of some types of cancer, a disease associated with many factors." Eden Organic Vegetable Ribbons are low in fat and a good source of dietary fiber. Also, "Diets low in sodium may reduce the risk of hypertension or high blood pressure, a disease associated with many factors." Eden Organic Vegetable Ribbons are made without salt and are sodium free. They are also a good source of protein, thiamin (vitamin B1), phosphorus, and magnesium.
Commercial pasta is made from highly refined, chemically treated flour, processed in minutes through Teflon dies and ultra high heat or microwave drying, resulting in inferior flavor, diminished nutrition, poor cooking quality, and questionable value.
