Eden Organic Vegetable Alphabets are made from durum wheat Triticum aestivum, the most sought after pasta making grain in the world, favored for its superior nutrition and ability to create a smooth firm texture. This grain is USA high plains grown on family farms committed to building vital soil, cleaning the environment, and producing the safest most nutritious food.

Eden Organic Vegetable Alphabets are small batch crafted at the Eden Organic Pasta Company, a Detroit landmark employing traditional pasta making techniques and vintage Italian equipment since 1923, and the first food production facility in North America to be third party certified organic. Organic whole grain durum is freshly milled at our certified organic, AIB rated Superior, Clinton, Michigan mill. Organic golden amber durum wheat is prepared at a certified organic mill. The flours are blended. The dough is prepared in four separate batches - durum wheat and golden amber durum wheat semolina; durum and semolina blended with organic beet powder; durum and semolina blended with organic spinach powder; and durum and semolina blended with organic carrot powder and organic annatto powder. Slow, thorough kneading prepares the dough. Using a traditional rotating screw press, each of the four batches of dough is extruded through an artisan letter and number brass die. The shaped and cut dough is then spread on drying racks. The pasta goes through an initial hot/air steam dryer to reduce moisture slowly and then to the final drying room for about 16 hours. After drying, equal amounts of each of the four different colored pastas are combined before packaging. Each step is crucial in creating pasta of exceptional color, flavor, texture, and character. The pasta is packaged in a reclosable box, with a delicious recipe and photo from Eden's kitchen printed on the back.

All Eden Organic Pasta is packaged in boxes made from recycled and recyclable paperboard, one of the most environmentally friendly packages available. According to the 100 percent Recycled Paperboard Alliance (RPA100.com), "Fourteen trees are saved for each ton of paperboard converted to 100 percent recycled paperboard. Trees are critical to the sequestration of CO2 (a greenhouse gas) in North America. For each ton of paperboard converted to 100 percent recycled paperboard, an equal amount of recovered fiber has been diverted from municipal landfills. Production of 100 percent recycled paperboard uses 50 percent less energy compared to virgin grades of paperboard, thus significantly reducing the greenhouse gases released into the environment."

Most commercial pasta is made from highly refined, chemically treated flour, processed in minutes through Teflon dies and ultra high heat or microwave drying, resulting in inferior flavor, diminished nutrition, poor cooking quality, and questionable value. Also, "Low fat diets rich in fiber containing grain products, fruits, and vegetables may reduce the risk of some types of cancer, a disease with many factors."
