Eden Organic Kamut & Buckwheat Rigatoni is small batch crafted at the Eden Organic Pasta Company, a Detroit landmark employing traditional pasta making techniques and vintage Italian equipment since 1923, and the first food production facility in North America to be third party certified organic. The Khorosan and buckwheat flours are prepared in at our organic, AIB highest rated, Clinton, Michigan mill. The two flours are blended and mixed with purified water. Slow, thorough kneading prepares the dough. Using a traditional rotating screw press, the dough is extruded through an artisan brass rigatoni (tube shaped) die, cut into individual pieces, and spread on drying racks. A patient drying process using steam and air finishes the pasta perfectly. Rigatoni spend about 16 hours in the final drying room. Each step helps to create pasta of exceptional flavor, texture, and character. The pasta is packaged in a reclosable box, with a delicious recipe and photo from Eden's kitchen printed on the back.
All Eden Organic Pasta is packaged in boxes made from recycled and recyclable paperboard, one of the most environmentally friendly packages available. According to the 100 percent Recycled Paperboard Alliance (RPA100.com), "Fourteen trees are saved for each ton of paperboard converted to 100 percent recycled paperboard. Trees are critical to the sequestration of CO2 (a greenhouse gas) in North America. For each ton of paperboard converted to 100 percent recycled paperboard, an equal amount of recovered fiber has been diverted from municipal landfills. Production of 100 percent recycled paperboard uses 50 percent less energy compared to virgin grades of paperboard, thus significantly reducing the greenhouse gases released into the environment."
Khorosan Triticum turgidum spp. turanicum is an ancient grain with large golden kernels native to Asia Minor and Egypt, often referred to as 'King Tut's' wheat. It is closely related to the ancient grain spelt, and is a distant relative of durum wheat. Its plump golden kernels, called 'berries', are 3 times the size of modern wheat. Khorasan was introduced to America by and organic farmer in Montana in the 1940s. It is a rare non hybridized grain that offers the highest protein of any wheat. Khorasan's protein structure (gluten) is highly water soluble, and many people with intolerance to other wheat find that they can thoroughly enjoy Khorasan wheat.
Buckwheat Fagopyrum esculentum or F. sagittatum is very low in gluten. As with kamut, the gluten that it does contain is highly water soluble and can be easily enjoyed by those with allergies to common wheat. Buckwheat is nature's best source of rutin, a very beneficial vitamin C complex flavonoid.
