Eden Organic Kamut Ditalini is small batch crafted at the Eden Organic Pasta Company, a Detroit landmark employing traditional pasta making techniques and vintage Italian equipment since 1923. The Eden Organic Pasta Company was the first food production facility in North America to be third party certified organic. The organic Khorasan flour is Eden milled at our AIB rated Superior, Clinton, Michigan mill. The flour is mixed with purified water and thoroughly kneaded into dough. Using a traditional rotating screw press, the dough is extruded through an artisan brass ditalini (small tube shaped) die, cut into individual short tubes, and spread on drying racks. A patient drying process using steam and air finishes the pasta perfectly. Ditalini spend about 16 hours in the final drying room. According to the 100 percent Recycled Paperboard Alliance (RPA100.com), "Fourteen trees are saved for each ton of paperboard converted to 100 percent recycled paperboard. Trees are critical to the sequestration of CO2 (a greenhouse gas) in North America. For each ton of paperboard converted to 100 percent recycled paperboard, an equal amount of recovered fiber has been diverted from municipal landfills. Khorasan Triticum turgidum spp. turanicum is an ancient grain with large golden kernels native to Asia Minor and Egypt, often referred to as 'King Tut's' wheat. It is closely related to the ancient grain spelt, and is a distant relative of durum wheat. Its plump golden kernels, called 'berries', are three times the size of modern wheat. Khorasan was introduced to America by an organic farmer in Montana in the 1940s. It is a rare non hybridized grain that offers the highest protein of any wheat. Khorasan's protein structure (gluten) is highly water soluble, and many people with intolerance to modern wheat find that they can thoroughly enjoy Khorasan.
