Eden Organic Rye Flakes are Nebraska family organically grown whole grain rye, gas fire roasted and rolled into delicious golden flakes. Hot cereal in minutes. 100% whole grain.

Eden Organic Rye Flakes are roasted and rolled in Nebraska. Whole grain rye is sprayed with filtered deep well water and gas flame roasted in a ceramic kiln. Immediately after roasting the grain is rolled into flakes. The flakes are packaged at Eden's AIB 'Superior' rated facility in one pound nitrogen flushed, reclosable, standing pouches.

History

Rye Secale cereale is a relative of wheat, but not a wheat. A rich, robust grain with a dark brown slender kernel, rye emerged as a wild seed bearing grass and was first cultivated as a cereal grain around 1,000 B.C. It is believed to have originated somewhere between the Austrian Alps and the Caspian Sea. For centuries rye was the staple bread making grain of northern Europe and western Asia and remains so today in the rugged northern climates. Rye is one of the unique grains that offers 'complete' protein containing all of the amino acids, including all of the essential ones.

Scientists at the USDA Human Nutrition Research Center at Tufts University say, "Whole grain helps regulate blood sugar by slowing down the conversion of complex carbohydrates into sugar. In fact, low-glycemic index food such as whole grain reduces hunger and can help to control weight." Scientists at the Agriculture Research Service completed a study of more than 2,000 people concluding, "at least three or more servings of whole grain everyday could reduce the chances of developing metabolic syndrome - a condition marked by a combination of abdominal obesity, high blood pressure, poor blood sugar control, low HDL 'good' cholesterol and high blood fats."

According to the FDA, "Diets rich in whole grain and other plant foods, and low in total fat, saturated fat, and cholesterol may reduce the risk of heart disease and some cancers." Also, "Low fat diets rich in fiber-containing grain products, fruits, and vegetables may reduce the risk of some types of cancer, a disease associated with many factors."
