Eden Organic Artichoke Ribbons are small batch hand crafted at the Eden Organic Pasta Company, a Detroit landmark using traditional pasta making techniques and vintage Italian equipment since 1923, and the first food production facility in North America to be third party certified organic. The organic flour is combined with organic Jerusalem artichoke flour, organic spinach powder, and purified water to form a dough. After slow, thorough kneading it goes through a series of rollers that repeatedly fold (laminate) the dough over itself. When the sheet has been laminated eight times, creating a light and even texture, it is fed between stainless steel cutters to form the desired width and cut to length. The pasta goes through an initial hot air/steam dryer to reduce moisture slowly and to a final drying room for about 16 hours. When ideal it's packaged. All Eden Organic Pasta is packaged in boxes made from recycled and recyclable paperboard, one of the most environmentally friendly packages available. According to the 100 percent Recycled Paperboard Alliance (RPA100.com), "Fourteen trees are saved for each ton of paperboard converted to 100 percent recycled paperboard. Trees are critical to the sequestration of CO2 (a greenhouse gas) in North America. For each ton of paperboard converted to 100 percent recycled paperboard, an equal amount of recovered fiber has been diverted from municipal landfills. The Jerusalem artichoke Helianthus tuberous is a small elongated, knobby tuber belonging to the daisy family compositae with a flower that looks similar to the sunflower. It is closely related to the sunflower family and is often referred to as the 'sun choke'. It is indigenous to North America where it can be found growing in the wild from Saskatchewan to Nova Scotia and down the eastern seaboard to the middle of Georgia and into the Midwest to Arkansas. The Jerusalem artichoke was a staple vegetable of Native American tribes for centuries. The Indians called them 'sun roots' and introduced them to the Pilgrims. Their popularity as a staple spread to Europe where it was listed in the 1620 edition of the Oxford English Dictionary. The Jerusalem artichoke is not to be confused with the globe artichoke that is an entirely different species. Nor does the name imply that it grows in Jerusalem. The name is actually a misinterpretation of the Italian word 'Girasola articiocco', meaning the Sunflower Artichoke.
The texture of the tubers is similar to potatoes but less starchy. Jerusalem artichoke's principal carbohydrate is inulin rather than starch. Unlike the starch in potatoes that converts to glucose very quickly in the body, the inulin in Jerusalem artichokes converts to fructose in the digestive process rather than glucose.
