One story is that Senator Fred Thomas Dubois of Idaho, who served in the Senate from 1901 to 1907 and sat as chairman of the committee that supervised the Senate Restaurant, gaveled through a resolution requiring that the the soup be on the menu every day. Eden Navy Beans will stay fresh indefinitely if stored properly in a dark, dry, cool area, however we recommend using them within two years of purchase. To prepare navy beans rinse thoroughly and soak for 6 to 8 hours. Strain and rinse again, then add fresh water to cover by 2 inches. Boil furiously uncovered for about 10 minutes, skim off any foam and add vegetables, herbs and spices and cook for about 1 hour and 15 minutes. In addition to your favorite spices we recommend a one inch strip of Eden Kombu for each cup of dried beans to soften and accentuate flavor. Season with about 1/4 teaspoon Eden Sea Salt or shoyu soy sauce toward the end of cooking. Cover and simmer for about two hours. If using a pressure cooker add all seasonings except salt or shoyu at the start of cooking and cook for about 40 minutes (or until tender).
