Studies show beans contain antioxidants similar to those in fruits and berries. "Beans are really loaded with antioxidant compounds," said Clifford Beninger, Ph.D., an environmental biologist and former researcher for the USDA's Bean Research Unit. "We didn't know how potent they were until now. In general darker colored seed coats were associated with higher levels of flavonoids, and therefore higher antioxidant activity." Researchers tested the antioxidant activity of flavonoids found in 12 common varieties of dry beans. They found one class of compounds in particular, anthocyanins, were the most active antioxidants in beans. These findings add antioxidant activity to a growing list of beneficial compounds found in beans and legumes. The study was published in the Journal of Agricultural and Food Chemistry.
Use Eden Black Soybeans as you would any other bean, long boiled or pressure cooked in soups, stews, side dishes with vegetables, casseroles, salads, dips or combined with whole grains. In Japan, black soybeans are often seasoned at the end of cooking with a little shoyu soy sauce and grain sweetener such as barley malt or pure maple syrup. To prepare black soybeans, first wash the beans. Then either soak them for 6 to 8 hours or overnight and discard the soaking water, or dry roast them in a heavy skillet until the skin of the beans becomes very tight and slightly split open (do not over roast, it produces a bitter flavor). Boil for two and a half to three hours.
