Eden Yansen (Dandelion Root Concentrate) is produced in Japan from Japanese dandelion root. The roots are harvested before the plant blossoms, when the energy of the plant is concentrated in the root. The roots are washed, chopped into small pieces and simmered over a low flame for several hours. The cooking water is then strained to remove impurities. The roots are simmered again in the strained water and stirred periodically until it becomes a thick paste. The concentrate is then sealed in dark glass bottles to preserve freshness.
