Tomato Black Bean Gazpacho

Ingredients
28 ounces Eden Organic Whole Tomatoes with Basil, do not drain or Eden Organic Whole Tomatoes with Roasted Garlic & Onions
14.5 ounces Eden Organic Diced Tomatoes w/Green Chilies, do not drain
1 medium onion, chopped
1/3 cup fresh parsley, packed and chopped
1/4 cup Eden Red Wine Vinegar
2 cloves garlic, chopped
1 tsp Eden Sea Salt, or to taste
3 Tbsp Eden Extra Virgin Olive Oil
1 medium cucumber, peeled, seeded and chopped fine
1 medium red bell pepper, seeded and chopped fine
2 cups cooked Eden Organic Dry Black Beans, see package directions
several drops hot sauce, if desired
2 Tbsp finely chopped green onions
(Add All Eden Ingredients to Shopping Cart)
Directions
Place the first eight ingredients in a blender or food processor and pulse until smooth. Remove and place in a bowl. Mix in the cucumber, red bell pepper and black beans. Chill for 1 to 2 hours. Place in serving bowls, add a drop of hot sauce to each and garnish each with scallions.
