Refried Kidney Beans

Serves 5 | Prep Time 20 minutes | Cook Time 1 hour 40 minutes

Ingredients

1/2 cup Eden Organic Dry Kidney Beans

1 1/2 cups water

1 Tbsp Eden Extra Virgin Olive Oil

1 clove garlic, minced

1 cup minced onion

1/2 cup minced green bell pepper

1/2 cup minced red bell pepper

1/4 tsp Eden Sea Salt

1 Tbsp minced jalapeno pepper

Directions

Cook beans per package directions. When done, drain and reserve 1/4 cup bean cooking liquid. Heat oil in a heavy skillet and sauté the onions and garlic for 2 to 3 minutes. Add peppers and saute 5 minutes. Mash the beans with reserved bean liquid. Add all remaining ingredients to the skillet. Sauté 5 minutes, mixing frequently until hot.
