Navy Bean Vegetable Soup

Serves 5 | Prep Time 15 minutes | Cook Time 1 hour 30 minutes

1/2 cup Eden Dry Navy Beans, soaked

4 cups water

1 clove garlic, minced

1 cup diced onions

1/4 cup diced carrots

1/4 cup green string beans, cut into 1 inch lengths

1/4 cup green peas, fresh or frozen

14.5 ounces Eden Diced Tomatoes with Basil
or Eden Diced Tomatoes with Roasted Garlic & Onion

1/2 tsp dried basil

1/4 tsp dried oregano

1/2 tsp Eden Sea Salt


Place beans and water in a heavy pot and bring to a boil. Cover, reduce the flame to medium low and simmer until tender, about 1 hour and 20 minutes. Add all remaining ingredients. Cover and simmer another 10 minutes.
