Navy Bean Vegetable Soup

Ingredients

  • 1/2 cup Eden Dry Navy Beans, soaked
  • 4 cups water
  • 1 clove garlic, minced
  • 1 cup diced onions
  • 1/4 cup diced carrots
  • 1/4 cup green string beans, cut into 1 inch lengths
  • 1/4 cup green peas, fresh or frozen
  • 14.5 ounces Eden Diced Tomatoes with Basil
    or Eden Diced Tomatoes with Roasted Garlic & Onion
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/2 tsp Eden Sea Salt

Directions

Place beans and water in a heavy pot and bring to a boil. Cover, reduce the flame to medium low and simmer until tender, about 1 hour and 20 minutes. Add all remaining ingredients. Cover and simmer another 10 minutes.
