1/2 cup Eden Dry Pinto Beans, soaked
or Eden Dry Kidney Beans or Eden Dry Black Beans

1/2 tsp Eden Hot Pepper Sesame Oil

1 tsp Eden Extra Virgin Olive Oil

1 clove garlic, minced

1/2 cup diced onions

1/2 cup diced red bell pepper

1/4 cup green bell pepper, diced

1/2 tsp Eden Sea Salt, or to taste

1/2 tsp ground cumin

1/2 tsp minced cilantro or parsley

Cook beans per box directions. Drain and reserve the cooking liquid - about 1 cup. Heat oils in a heavy skillet and sauté the garlic and onions for 2 to 3 minutes. Add the peppers and sauté´ another 5 minutes. While the vegetables are cooking, mash 3/4 of the beans with a potato masher to form a coarse, thick puree. Add the remaining whole beans and mix while slowly adding enough bean cooking water to form the desired consistency - not too thick or too watery. Add the salt, cumin and cilantro. Cover and cook another 10 minutes over low heat, stirring occasionally. For a spicier flavor, a drop or two of hot sauce can be added.
