Basic Boiled Dry Beans

Ingredients

1 piece Eden Kombu, 2 inches long
1/2 cup any Eden Organic Dry Beans
1 1/2 cups water
1/8 teaspoon Eden Sea Salt

Directions

Wash beans, place in a bowl and cover with 3 inches of cold water. Let soak 6 to 8 hours or overnight. Drain the beans and discard soaking water. Place kombu, soaked beans and 1 1/2 cups water in a heavy pot. Bring to a boil. Reduce the flame to medium-low and simmer 10 minutes, skimming off and discarding any foam. Cover the beans and simmer on low for 1 hour or until 80% done. If more water is needed during cooking, add a small amount as needed to just keep the beans covered. Add sea salt, cover and simmer another 10 to 20 minutes until tender.
