Heat oil in a medium saucepan and sauté the onions for 1 minute. Add all remaining ingredients except the kamut flakes. Cover and bring to a boil. Add the kamut flakes, cover and reduce the flame to low. Simmer 3 minutes. Remove from the flame and mix in the pistachios before serving.
