Chili with Fresh Corn

Chili with Fresh Corn

Ingredients

1 1/2 tsp Eden Extra Virgin Olive Oil

2 cups onions, small diced

1 cup carrots, small diced

1 1/2 cups organic sweet corn, fresh or frozen

60 ounces Eden Organic Chili Beans (seasoned dark red kidney), do not drain

28 ounces Eden Organic Whole Tomatoes, drained, reserve tomato liquid, coarsely chop tomatoes

1 1/2 Tbsp dried parsley flakes

Directions

Heat oil in a medium soup pot and sauté the onions for 3 to 5 minutes. Add all remaining ingredients, mix, cover and bring to a boil. Simmer on medium low for 10 to 15 minutes.
