Place the shiitake, water and maple syrup in a saucepan, cover and bring to a boil. Reduce the flame to medium-low and simmer 5 minutes. Reduce the flame to low, add the shoyu and simmer another 5 minutes. Remove and drain the water off the shiitake. The water may be used for making a sushi dip sauce or for soup. The shiitake slices are now ready to use as a filling for sushi. Delicious together with sliced avocado in sushi!
