Miso Pesto with Rigati Pasta

Serves 6 | Prep Time 5 minutes | Cook Time 10 minutes

Miso Pesto with Rigati Pasta

Ingredients

12 ounces Eden Organic Spelt Ziti Rigati, 1 package

1/4 cup Eden Extra Virgin Olive Oil

4 cloves garlic, pressed

1/2 cup water

1 1/2 Tbsp Eden Organic Shiro Miso

4 cups fresh basil, loosely packed, finely chopped

1/2 cup pine nuts, dry pan roasted
or sunflower seeds

Directions

Cook pasta according to package directions, rinse quickly and drain. While the pasta is cooking, purée all remaining ingredients in a blender or food processor until smooth. Pour pesto over the pasta while it's still hot.
