Pasta with Red Wine Vinaigrette

Pasta with Red Wine Vinaigrette

Ingredients

12 ounces Eden Organic Kamut & Quinoa Twisted PairĀ®, 1 package
Eden Organic Spelt & Buckwheat Gemelli

2 cups broccoli, small florets, blanched 2 minutes

2 cups cauliflower, small florets, blanched 2 minutes

2 cups carrots, sliced and blanched 2 minutes

Vinaigrette

1/4 cup Eden Red Wine Vinegar

1/4 cup water

3 Tbsp Eden Extra Virgin Olive Oil

2 cloves garlic, minced

2 tsp Eden Organic Brown Mustard
or any Eden Organic Mustard

1/4 tea Eden Sea Salt

1/4 tea freshly ground black pepper

2 Tbsp fresh basil, finely chopped

1/2 tsp dried oregano

(Add All Eden Ingredients to Shopping Cart)

Directions

Cook pasta as package directs, rinse quickly and drain. In a food processor, blend the vinegar, water, oil, salt, pepper, mustard, basil and oregano. Place pasta, broccoli, cauliflower and carrots in a bowl. Toss with the dressing and serve room temperature or chilled.
