Carrot, Cabbage and Dried Fruit Salad

Carrot, Cabbage and Dried Fruit Salad

Ingredients

1/2 tsp Eden Sea Salt

2 Tbsp Eden Extra Virgin Olive Oil

2 Tbsp Eden Red Wine Vinegar
or Eden Brown Rice Vinegar

1/4 cup lemon juice, freshly squeezed

1/4 tsp ground cumin

1/4 tsp paprika powder

1 1/4 cups carrots, coarsely grated

1 1/4 cups cabbage, finely shredded

1/2 cup Eden Dried Montmorency Cherries, chopped
Eden Dried Wild Blueberries, Eden Dried Cranberries, or organic seedlesss raisins

1 Tbsp fresh parsley, finely minced

2 ounces Eden Roasted Pumpkin Seeds
or coarsely chopped Eden Tamari Roasted Almonds

Directions

Mix the first six ingredients together. Place the carrots, cabbage, raisins and parsley in a serving bowl. Pour the dressing over and toss to evenly mix. Serve room temperature or chill.
