Udon & Hiziki Vegetable Salad

Serves 6 | Prep Time 1 hour 10 minutes | Cook Time 20 minutes

Udon & Hiziki Vegetable Salad

Ingredients

3 Tbsp Eden Hiziki or Arame
or Eden Hiziki

1 cup water

2 medium carrots, julienned

1 cup cauliflower florets, blanched 3 minutes, rinse

1 cup broccoli florets, blanched 2 minutes and rinse

1/2 cup snow peas, remove strings, slice in half, blanch 1 min., rinse

8 ounces any Eden Organic Udon

1/2 cup green onions, thinly sliced

Dressing

1/2 tsp Eden Hot Pepper Sesame Oil

1 tsp Eden Toasted Sesame Oil

1 1/2 Tbsp Eden Ume Plum Vinegar, or to taste

1/4 cup organic roasted tahini (sesame butter)

3 cloves garlic, minced

1/4 cup water

2 Tbsp minced parsley

Directions

Rinse and soak hiziki or arame in warm water to cover for 10 minutes. Discard soaking water. Place hiziki or arame in a small saucepan and simmer 10 to 15 minutes in 1 cup water. Drain, rinse and place in a mixing bowl. Place blanched vegetables in the mixing bowl. Cook pasta as package directs, rinse and drain. Mix pasta, sea vegetable, blanched vegetables, and green onions. Prepare the dressing by mixing all ingredients in a blender. Add to the salad and mix well. Chill 1 hour before serving.
