Herbed Pasta Salad

Ingredients
Salad Dressing
6 Tbsp Eden Extra Virgin Olive Oil
1/2 tsp Eden Sea Salt
1 1/4 Tbsp Eden Red Wine Vinegar
2 tsp lemon juice, freshly squeezed
1/2 tsp freshly ground black pepper
Salad Ingredients
12 ounces Eden Organic Kamut & Buckwheat Rigatoni
3/4 cup Eden Organic Diced Tomatoes, drained
1 medium cucumber, peeled if waxed, diced
2 Tbsp small capers, rinsed
2 Tbsp fresh parsley, finely chopped
1/2 cup pitted black olives
2 Tbsp fresh basil, finely chopped
1 Tbsp fresh oregano, finely chopped
2 Tbsp fresh mint leaves, finely chopped
1 cup Eden Organic Garbanzo Beans, drained
2 cups mixed baby salad greens
(Add All Eden Ingredients to Shopping Cart)
Directions
Mix the salad dressing ingredients together and set aside. Cook the pasta as package directs, rinse and drain. Place the pasta in a bowl and add all remaining ingredients except the baby salad greens. Mix in the salad dressing just before serving. Serve over the baby salad greens.
