Lo Mein Noodles

Lo Mein Noodles


8 ounces Eden Udon, 1 package
or any Eden Udon

1 Tbsp Eden Toasted Sesame Oil

.88 ounces Eden Whole Shiitake Mushrooms, 1 package

1 medium carrots, julienned

1 medium onion, sliced

2 cups Chinese cabbage, sliced

1 1/2 Tbsp Eden Shoyu Soy Sauce

2 tsp fresh ginger root, finely grated

3 Tbsp Eden Tamari Roasted Almonds


Soak shiitake in 1 cup hot water for 20 minutes. While shiitake are soaking, cook pasta as package directs. Rinse, drain and set aside. Reserve shiitake soaking liquid, discard stems and slice tops. Heat oil, sauté onion, carrots and shiitake. Add shiitake soaking water, cover and simmer 5 minutes. Add pasta and greens. Add shoyu and ginger. Mix, cover and cook for 2 to 3 minutes. Sprinkle the almonds over the pasta and serve.
